Every time I try to describe this Tomato, Fresh Corn, & Burrata Salad I just want to say “YUM!” Because that’s really all there is to say. It’s just…yum. I’ve been all about burrata in my salads lately. I love it in this simple salad with some olive oil and balsamic! It’s fresh, quick, and delicious with a crusty piece of bread or your favorite main dish.
Using Fresh Raw Corn in Salads
Ready for my latest secret for perfect summer salads? It’s fresh corn cut right off the cob. Of course you can grill or cook your corn, but it’s actually delicious raw, especially in the summer when it’s in season! It’s going to add a sweet crunch to your salad that just works with the tomato and burrata.
Easiest Homemade Dressing
You know how much I love a homemade dressing! I really believe it’s one of the secrets to an incredible salad. For this Tomato, Fresh Corn, & Burrata Salad I use just a drizzle of olive oil and balsamic vinegar, which lets the flavors in the salad be the star of the show. Spring for the highest quality olive oil you can. I think it makes a difference!

Description
This crisp, flavorful, and sweet Tomato, Fresh Corn, & Burrata Salad is simple as can be and puts the best flavors of summer into one dish!
Ingredients
- 3 medium tomatoes, cut into 2 inch pieces
- 3 ears fresh corn (raw), cut off the cob
- 8 ounces burrata
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Sea Salt
- Pepper
- Fresh basil leaves
Instructions
- Add the tomatoes and corn to a large plate or platter. Carefully tear the burrata and scatter over the tomatoes and corn.
- Drizzle with olive oil, balsamic vinegar and sprinkle with sea salt and fresh cracked pepper. Tear some fresh basil leaves and scatter on top. Serve immediately.
