Shaved Broccoli Stalk Salad
A scrappy salad that’s summery, bright, and a little different! Shaved Broccoli Stalk Salad is an easy and fresh side dish.
This Shaved Broccoli Stalk Salad recipe was inspired by my friend Yunnie, who writes the Kim Chi Avocado blog. I’ve done a few Sushi Nights with her on Instagram Live and they’re always a big hit! Yunnie made this salad on her story and I knew I had to give it a try. It’s simple, light, refreshing, and absolutely delicious. My whole family loves it, even the kiddos!
Ingredients in Shaved Broccoli Stalk Salad
Just like all of my favorite recipes, this ingredient list is short, fresh, and absolutely delicious when it’s all combined.
- Broccoli stalks
- Fresh squeezed lemon juice
- Big hunks of freshly shaved Parmesan
- Flaky sea salt
- Pepper
Shaving Broccoli with a Mandoline
I really love that this recipe uses a part of the broccoli (the stalks) that I usually toss. You can use the florets to make roasted broccoli, then keep the stalks for this Shaved Broccoli Stalk Salad! Start with a vegetable peeler and take the bulky, fibrous layer off the stalk, then use a mandoline to slice the stalk into really thin discs. Here is an example of a mandoline. They come in less expensive versions that work well too. I would order one based off the reviews. If you don’t have a mandoline, just make sure your knife is as sharp as possible. I love Shun knives for general kitchen use.
The BEST Side Dish
I honestly can’t think of a dish that WOULDN’T work with this Shaved Broccoli Stalk Salad. Serve it alongside grilled chicken, steak, or fish for the perfect side!

Description
A scrappy salad that’s summery, bright, and a little different! Shaved Broccoli Stalk Salad is an easy and fresh side dish.
Ingredients
- 1 large or 2 small broccoli stalks
- 1 lemon
- ¼ cup freshly shaved Parmesan cheese
- Flaky sea salt
- Fresh cracked pepper
Instructions
- Use a peeler or a sharp knife to trim the broccoli stalks of any thick fibrous parts sticking out.
- Use a mandoline (this really helps to get paper thin shavings) and slice the broccoli stalks into one layer on a plate. If some overlap a little that’s okay.
- Squeeze 1 whole lemon over the top, making sure all the broccoli is covered in the juice. Let sit for 5-10 minutes then use a vegetable peeler to shave large chunks of fresh Parmesan on top.
- Finish with a pinch of flaky sea salt and a crack of black pepper and serve immediately.

Added this side dish to our smorgasbord holiday meal. My husband was playing his bass at the time when I had him try a bite. He was unable to continue playing because his senses were working overtime! WOW! I sprinkled some brewers yeast on top, too.

This is such a game changer for me! I tried it but only had a cheese grater, so used that! And I’m dairy free so sprinkled a little nutritional yeast instead of parm. So good! I’m obsessed!
