The big news in our house is that Ava’s birthday is TOMORROW! Don’t even get me started on my babies growing up and turning into the coolest people I know. Instead, I’ll focus on the tasty treats I’m making in her honor! Ava LOVES chocolate and peanut butter (who doesn’t?!), and so we’re making these Crispy Chocolate Peanut Butter Bites. They look like truffles that took a lot of time and effort, but they’re actually really quick to make and they’ll keep for a while in the fridge or freezer. Dessert all-star status!
No-Bake Crispy Chocolate Peanut Butter Bites
One of my favorite things about this recipe is that it’s a NO BAKE dessert! You can make it without ever turning your oven on, so get ready to crave these all summer long. This also makes them a great option for preparing ahead of time and storing in the refrigerator when entertaining!

I always try to get my girls involved in the kitchen. Since we’re making these for Ava’s birthday, I love that Zoe can pitch in and help with celebration preparations! A few parts of this recipe your little helper can do with supervision:
- Sifting powdered sugar to make sure there are no lumps
- Pushing the buttons on the microwave to melt the peanut butter and butter
- Stirring the dry ingredients in with the melted peanut butter and butter
- Rolling scooped bites into perfect balls before dipping them in chocolate
- Sprinkling with sea salt

When I say simple, I mean already-in-your-pantry simple! You could make these tonight. You SHOULD make these tonight! These Chocolate Peanut Butter Bites are made with:
- Peanut butter
- Butter
- Rice crispies
- Powdered sugar
- Dark chocolate chips
- Sea salt
How to Make Crispy Peanut Butter Chocolate Bites
Melt, mix, roll, dip. Are we dancing? Are we baking? Doesn’t matter when it’s this fun and delicious. These bites are so, so easy to make.
- Melt the butter and peanut butter in a microwave-safe dish. Give it a good stir so everything is well combined.
- Stir in the powdered sugar and rice crispies. Give it a quick taste, you know, for science. Just to make sure it’s good.
- In another microwave-safe bowl, melt the chocolate chips.
- Use a mini ice cream scoop to form balls out of the peanut butter-crispy mixture. Dip them into the melted chocolate and finish with a sprinkle of sea salt.
- Let them set for 15 minutes in the freezer or 1 hour in the fridge. They’re ready to eat, love, share, repeat!
Storing Chocolate Peanut Butter Bites
I really love how these taste cold! As a bonus, it helps the chocolate set and the bites maintain their perfect shape. I store them in an airtight container in the fridge for quick and easy snacking access!

Crispy Chocolate Peanut Butter Bites

Ingredients
- 2 cups creamy peanut butter
- 8 tablespoons unsalted butter
- 2 cups powdered sugar, sifted so there’s no lumps
- 1 cup rice crispies
- 3 cups dark chocolate chips
- Sea salt
Instructions
- In a microwave safe bowl melt the peanut butter and butter in 30 second increments, stirring in between.
- Add powdered sugar and rice crispies to the peanut butter mixture and stir until well combined. Set aside.
- Line a baking sheet with parchment paper. Set aside. Melt the chocolate chips in another microwave safe bowl in 30 second increments, stirring in between.
- Use a mini ice cream scoop or tablespoon measure to form balls out of the peanut butter mixture. Use a fork to dip each ball into the melted chocolate, let excess chocolate drip off then place on parchment lined baking sheet. Sprinkle a little sea salt on top while chocolate is still melted. Repeat until mixture is used up.
- Place in the freezer for 15-20 minutes to set, or in the fridge for 1 hour. Store in an airtight container in the fridge for up to 10 days.

These are sinful. Ate like 3/4 of the batch in two days. When making the recipe, I did have to freeze the peanut butter mixture for about 5 -10 minutes so that it would be firm enough to scoop into balls.
