Easy Watermelon Mint Salad

I can’t even believe how insanely delicious this “recipe” is. I put the word recipe in quotations because it’s hardly  even that. Literally it’s as easy as throwing four ingredients together in a bowl and calling it a salad.

However, the combination of these four ingredients makes for the most refreshing, beautiful and delicious summer salad. EVER.

I take absolutely zero credit for this thing of beauty. I saw my friend Carly of Carly Jean Los Angeles make it on her Instagram stories one day and I immediately decided I had to try it. Since then I’ve made it at least 2-3 times a week and we simply cannot get enough!

If you want the simplest dish that will wow your guests, this is it. Watermelon, raspberries, mint, lime. BOOM.

Summer in a bowl. It’s fabulous served with a simple Caesar Salad and some Grilled Chicken!

Description

Four simple ingredients combined to make the most refreshing, delicious and beautiful summer salad!


Ingredients

Scale
  • 1 small seedless watermelon, diced into 1-inch cubes (or half a medium watermelon)
  • 12 ounces raspberries
  • 2 tablespoons chopped fresh mint (about 45 leaves)
  • juice from 1 lime (about 12 tablespoons)

Instructions

  1. Add the diced watermelon and raspberries to a large bowl. Sprinkle over the fresh mint and drizzle on the lime juice. Serve immediately or cover and keep in the fridge until ready to eat.

Notes

*Served best cold.

*Recipe can easily be doubled.
