I always say, the best way to make a really good salad is to make homemade dressing. Use fresh, in season ingredients drizzled with a homemade punchy homemade dressing and you’re golden! Some of my favorites I’ve made over the years are my Citrus Salad Dressing, Caesar Dressing, Lemon Sumac Dressing and a tangy but sweet Maple Balsamic Dressing. I also love changing it up and adding them to so many different foods, not just salad! 

But can I tell you, when I made this tahini mustard dressing, I declared it a NEW favorite. Yes, it’s so good that it may just be the best one I ever made which is so funny because it was an accident! I wanted to make a lemon tahini dressing, but I didn’t have the star ingredient . . . lemon! And since I pride myself on being resourceful, I grabbed a bottle of white balsamic from my pantry and used it for the acid and WOW! You know me, I love a good acidic dressing, but this one is a true must-try!

White Balsamic Vinegar

White balsamic vinegar is a milder and slightly sweeter version of traditional balsamic vinegar. Unlike the dark, rich balsamic you might be familiar with, white balsamic is made from white grapes and is cooked at a lower temperature which gives it a lighter color and delicate flavor. This makes it a great choice for recipes where you want a hint of sweetness and tang without overpowering the other ingredients which is perfect for dressings like this! 

And as you know, good quality ingredients really do make a difference. That’s why I’m such a fan of Uncle Berch’s white balsamic vinegar. It’s made with top-notch grapes and has a beautifully balanced flavor that elevates whatever I use it in. White balsamic adds just the right amount of tanginess and sweetness, perfectly complementing the creamy tahini and peppery mustard. It really takes this dressing from good to absolutely amazing!

  • Whole Grain Mustard – Adds a peppery kick and texture to the dressing that gives it its classic tangy twist. Make sure you buy a high-quality mustard where you can see the grains! 
  • Tahini – Gives the dressing a rich, creamy base with a subtle nutty taste that balances the flavors. There are many types of tahini out there, but I love the Soom brand. 
  • Salt – A pinch of salt all the flavors and brings the ingredients together beautifully.
  • White Balsamic Vinegar – Adds a tangy sweetness that brightens up the dressing without overpowering it. You could use other types of vinegar to change up the flavor, but I recommend trying a white balsamic if you’ve never had it. 
  • Olive Oil – Adds smoothness and helps emulsify the dressing, giving it a silky texture. Again, use a good quality olive oil here. You can either get one that is filtered so you don’t taste it as much or a more natural one where the olive oil taste will shine through.

One of the best things about this recipe is how easy it is to make. Just measure everything out into a medium sized mixing bowl. Whisk until everything is fully combined and transfer to a jar with a lid or an airtight container. Use it all week on your favorite salads, veggies, or use it to marinate chicken or steak!

Expert Tips

  • You can use a whisk and a bowl to mix everything together, or add it all to a mason jar with a lid and shake until emulsified. Easy cleanup as the dressing stays right in the jar! 
  • Before storing, give the dressing a taste to make sure it’s seasoned correctly. Add more vinegar, tahini, or your favorite spices to make it your own!
  • Before using, give the dressing a good whisk or shake to make sure the oil doesn’t separate.

Customize It

  • Substitute lemon juice for white balsamic vinegar for a classic lemon tahini dressing.
  • Add a teaspoon of honey for a touch of sweetness.
  • Use apple cider vinegar instead of white balsamic for a different tangy flavor with a hint of sweetness.
  • Add minced garlic for a more zesty and savory taste.
  • Stir in your favorite fresh herbs like parsley or dill.
  • Use Dijon mustard instead of whole grain mustard for a smoother texture and slightly different flavor.

Storage Instructions

If stored properly, this dressing will last in the fridge for up to 10 days. Once the dressing is mixed, if you have any leftovers, transfer it to a clean mason jar with a lid or a sealed airtight container. Every time you use it, give it a shake or a stir to redistribute the ingredients. If it’s too thick, let it sit out on the counter for 10-15 minutes before using. Freezing is not recommended.

  • 1 tablespoon tahini (I like Soom)
  • ⅛ teaspoon salt
  • ¼ cup white balsamic vinegar 
  • 3 tablespoons olive oil
