When you have a cut of meat as nice as a filet mignon, you don’t need specialty seasonings, fancy marinades, or expert technique to make it delicious. That’s what you’re paying for with a higher-end cut! Filet mignon is a huge treat; it’s a more expensive steak with a texture that’s naturally smooth and buttery. I’m not a big red meat eater, but on a special occasion, my entire family devours this. I season filet mignon with just a bit of salt and pepper lightly coating each side before it goes onto the grill.
How to Cook Filet Mignon Medium Rare
This is one of those main dishes where the quality of the ingredients speak for themselves. Buying filet mignon can be a splurge (although I’ve seen them at Trader Joe’s at a good price point recently), but it makes it really simple to create a finished product that feels luxurious and special. Here are my best tips for perfectly grilled filet mignon.
- The secret to a perfect grilled filet mignon: rest! Yup, the best way to make sure you’re steak is up to par is to leave it alone for a bit. Prior to grilling, pull your filet out of the refrigerator and let it sit at room temperature for about 30 minutes. I know this feels counterintuitive, but putting a cold filet on the grill is going to create a rubbery texture!
- While your steak rests, heat the grill to 400 degrees Fahrenheit over medium/high heat. It only needs 6-7 minutes one each side for a medium rare finish. You can add an extra minute for more well done or if you have a thicker filet.
- After grilling, it’s a little bit more rest before you cut into your steak, but this time, only 5 minutes. Serve your finished filet with Herb Roasted Potatoes, Skillet Broccolini, and Quick Tomato Garlic Confit!

Ingredients
- 1 (8oz) filet mignon
- ½ teaspoon kosher salt
- 1/2 teaspoon pepper
Instructions
- Prior to grilling, take the filet out of the fridge and let it come to room temperature for 30-45 minutes. Preheat your grill to 400 degrees over medium/high heat.
- Mix together the salt and pepper and sprinkle all sides of the filet with the mixture, pressing the spices into the meat. You don’t have to use all of the salt and pepper, just enough to lightly and evenly coat the filet.
- Spray your grill before adding the filet. Cook for 6-7 minutes on each side for medium rare. If your filet is very thick it might need a couple more minutes per side. Remove and let sit for 5 minutes before cutting.
